How to Make Grinder Salad

  • Make the dressing ahead of time so the flavors can blend together in the fridge.
  • In a small bowl, mix mayonnaise, garlic, vinegar, Italian seasoning, crushed red pepper flakes and salt and pepper together. Refrigerate while assembling the grinder sandwiches.
  • Shred the head of iceberg lettuce with a knife. Mix with banana peppers and red onion slices in a large bowl. Cover and keep in refrigerator until time to mix with dressing. Then, combine the salad and dressing with kitchen tongs.

How to Make a Grinder Sandwich

  • Heat oven to 400 degrees F.
  • Slice loaf of bread down the middle and open to 2 long slices. Place on a sheet pan and hollow out the middle of the bread. Leave about 1 inch of bread all the way around and discard the crumbs.
  • Place the sliced cheese on one half of the bread. Layer ham, salami and pepperoni on the other half.
  • Put sub in oven and heat until cheese melts and bread is toasted. (around 5 minutes).
  • Take out of oven and add tomato slices on top of the baked deli meats. Sprinkle tomatoes with salt, pepper and Italian seasoning.
  • Remove salad and dressing from fridge. Pour dressing over lettuce and veggies in bowl. Toss well with kitchen tongs and place on top of cheese.
  • Grate fresh parmesan over tomatoes and salad.
  • Close sandwich by placing one side on top of the other. Press down to seal.
  • Just before serving, cut into slices and serve with potato chips or potato wedges to scoop up extra salad!

Ingredients

DRESSING

  • ¾ cup mayonnaise
  • ½ teaspoon garlic (minced)
  • 2 Tablespoons red wine vinegar
  • ½ teaspoon dried Italian seasoning
  • teaspoon crushed red pepper flakes

  • teaspoon black pepper

SALAD

  • 1 head iceberg lettuce, shredded (shredded)

    This sandwich takes me back to getting a nice NY Italian sub. The only thing I do different is when I take out of the oven I add the tomato, seasoning & parm on top of the cheese. I then move the meats over on top of the tomatoes. I do this so my salad dressing will soak into the one half of the bread. Makes more a much less messy sandwich.

    Never heard of a grinder sandwich until this recipe. We tried it and loved it. This sandwich is huge! We cut it into 16 pieces and it was still plenty for our group. Took it on a picnic and had a blast.
