  • Chicken breasts - I use cooked shredded rotisserie chicken, but boneless breasts or thighs will work also.
  • Chicken broth - sub chicken stock if watching sodium content.
  • Cream of chicken soup- use the canned version or make your own.
  • Whole milk - can use 2 percent or skim milk if desired.
  • Seasonings - garlic powder, onion powder, dried thyme, salt, black pepper
  • Frozen peas and carrots - substitute with fresh or other frozen vegetables like broccoli or asparagus.
  • Cornstarch and water - makes a slurry that thickens the sauce.
  • Bisquick baking mix- you can use a different brand of baking mix, make homemade drop biscuits, or use the canned variety.
  • Butter - melted, unsalted butter

Instructions

Preheat oven to 375°F. Grease a 9x13-inch baking dish.

In a large bowl, combine chicken, broth, condensed soup, milk, garlic powder, onion powder, thyme, salt, pepper, and peas and carrots. Mix well.

Pour mixture into a large skillet on the stove top. Heat over medium heat, stirring occasionally, until creamy mixture starts to simmer. Add cornstarch and water to thicken the mixture.

Slowly stir into simmering mixture until thickened to a gravy consistency.

Pour thickened mixture into prepared 13 x 9 inch baking dish.

In a medium bowl, mix Bisquick, ½ cup milk, and melted butter until a soft dough forms.

Drop spoonfuls of dough over creamy mixture in baking dish. They will spread out, so you only need about 6 over the entire casserole.

Bake in a 375ºF oven for 30-35 minutes until Bisquick drop dumplings are golden brown on top.

Here are 3 ways to customize Chicken and Dumplings with Bisquick:

Creamy Garlic Parmesan – Add ½ cup grated Parmesan and an extra teaspoon of garlic powder to the soup mixture.

Spicy Cajun Style – Add a teaspoon of Cajun seasoning and a dash of hot sauce. You can even sub crumbled sausage instead of chicken.

Herb & Cheddar Dumplings – Mix in shredded cheddar and dried herbs (like parsley or rosemary) into the dumpling dough.
