Red Skin Potato Salad
is a creamy blend of red skinned potatoes, mayonnaise, sour cream, dijon mustard, celery, and bold spices.

Dice potatoes with skins on and place in a large pot of salted cold water. Bring to a boil.
Mix the dressing ingredients together.
Once cooked, drain potatoes and add to dressing in the mixing bowl while still hot.
Stir mixture well and let it rest a few minutes. Add salt and pepper if needed.
Garnish with parsley, refrigerate or serve warm.
