Ingredient List

  • baby gold potatoes - cut in half
  • bell peppers - cut into ¾ inch pieces
  • yellow onion - cut into ¾ inch pieces

Step by Step Instructions

  • Combine the sausage, potatoes, and vegetables in a large bowl.

  • Drizzle the oil over the top, then season with the Italian seasoning, paprika, garlic powder, salt, and pepper. Toss well until the sausage and vegetables are evenly coated with the seasonings.

  • Arrange the sausage and vegetables in a single layer on a large, rimmed baking sheet.

  • Bake in a 400 degree F. oven for 20 minutes, flip the sausages and vegetables over, and bake another 15-20 minutes or until the potatoes are fork-tender.

I prefer to season this dish by tossing everything in a bowl rather than combining directly on the sheet pan to ensure an even coating of the oil and seasonings.

The exact cooking time will depend on how large you cut your potatoes. Larger potatoes will take longer to cook. I recommend ¾-1 inch pieces.

Customize It!

  • Beef, pork, turkey or chicken sausage all work well with this recipe. Just make sure you use a fully cooked, smoked sausage. 
  • Baby red potatoes can be used instead of gold. You can also use full-sized Yukon gold or red potatoes; but be sure to cut them into ¾ inch chunks.
  • Sweet paprika can be used instead of smoked in this recipe.
  • Add ½ teaspoon of red pepper flakes to the seasoning mix to add some spice.
  • Feel free to mix up the vegetables as you like. Zucchini, broccoli, fresh green beans, sweet potatoes, asparagus, and Brussels sprouts are all great options.

Can I use a rimless cookie sheet instead?

You can use a rimless cookie sheet, but you'll have to make sure the sausage and veggies are not placed too close to the edges or they can slip off.

Why is the temperature set so high?

400ºF is the perfect temperature to cook the sausage and potatoes evenly so they are done at the same time. Make sure to dice the potatoes uniformly so they will cook evenly.

Storage and Freezing

  • Store leftovers in an airtight container in the refrigerator for 3-4 days.
  • The cooked sheet pan meal can be frozen for 2-3 months. Allow it to cool completely before transferring to an airtight container for storage. Thaw in the refrigerator before reheating.
  • Keep in mind that freezing potatoes can cause them to change texture when thawed.
  • Reheat in a 350 degree F oven until warm throughout - approximately 15 minutes.
