1 ½poundsbaby gold potatoes(cut in half)
2bell peppers (green and red)(cut into ¾ inch pieces)
1large yellow onion(cut into ¾ inch pieces)
3tablespoonsolive oil
1tablespoonItalian seasoning
½teaspoonsmoked paprika
½teaspoongarlic powder
½teaspoonsalt
¼teaspooncracked black pepper
Instructions
Preheat the oven to 400 degrees F.
Combine the sausage, potatoes, and vegetables in a large bowl. Drizzle the oil over the top, then season with the Italian seasoning, paprika, garlic powder, salt, and pepper.
Toss well until the sausage and vegetables are evenly coated with the seasonings.
Arrange the sausage and vegetables in a single layer on a large, rimmed baking sheet.
Bake for 20 minutes, flip the sausages and vegetables over, and bake another 15-20 minutes or until the potatoes are fork-tender.
Serve hot, garnished with chopped parsley if desired.
Notes
Line the baking sheet with parchment paper for easier cleanup. Be careful not to tear it when you flip the sausage and potatoes.
Use a rimmed baking sheet to stop the items falling off the side when moving the tray to and from the oven.
If using vegetables that cook quickly, such as zucchini or asparagus, you may need to add them partway through the cooking process so they don’t overcook.
Cut the potatoes and vegetables into pieces of the same size so they cook evenly.
