Strawberry Pecan Salad combines the coolness of strawberries, feta, and mixed greens to compliment many meals. Toasted pecans top off this vegetarian treat that's perfect for all types of holiday celebrations.

But, I think my favorite part of this dish is the luscious strawberry dressing made from ingredients in the salad itself. A blender (ad) full of strawberries, pecans and feta with olive oil, vinegar and sugar creates the most delicious salad dressing I've ever tasted. Oh my...it's amazing!
Another way to serve this salad is to add blueberries and you've got a Red, White and Blue Salad for Memorial Day, Veteran's Day and the 4th of July!

Step by Step Instructions
- Wash and dry romaine lettuce, tear into bite size pieces.
- Place lettuce in a large serving bowl and add mixed greens. Toss.
- Slice strawberries and arrange in middle of the bed of lettuce. Add blueberries if desired.
- Sprinkle feta on top of strawberries, or place it on the sides.
- Add pecans to greens on both sides of strawberries.

SALAD

- ¼ cup tomato-basil feta cheese
- ¼ cup pecans
- ¼ cup olive oil
- 1 Tbsp. apple cider vinegar
- 2 Tbsp. sugar
- ½ tsp. dried basil
- ¼ tsp. salt

This was such a delicious salad! I want to make it for a family gathering but I have an aunt who is allergic to strawberries! What would be a good substitute for strawberries in this salad that would compliment the feta cheese?
You could definitely use any type of berry in this salad. Raspberries, blueberries and blackberries work well. Fresh peaches are also delicious when mixed with feta cheese!
