Strawberry Pecan Salad is a nice accompaniment to a whole chicken, pork tenderloin, or savory filet mignon. It's also a healthy alternative to heavier sides, and can stand alone as a vegetarian entree.

But, I think my favorite part of this dish is the luscious strawberry dressing made from ingredients in the salad itself. A blender (ad) full of strawberries, pecans and feta with olive oil, vinegar and sugar creates the most delicious salad dressing I've ever tasted. Oh my...it's amazing!

Another way to serve this salad is to add blueberries and you've got a Red, White and Blue Salad for Memorial Day, Veteran's Day and the 4th of July!

Step by Step Instructions

  • Wash and dry romaine lettuce, tear into bite size pieces.
  • Place lettuce in a large serving bowl and add mixed greens. Toss.
  • Slice strawberries and arrange in middle of the bed of lettuce. Add blueberries if desired.
  • Sprinkle feta on top of strawberries, or place it on the sides.
  • Add pecans to greens on both sides of strawberries.

How to Make Strawberry Dressing

This homemade strawberry dressing is so good, you'll be eating it by the spoonful! Here's what you'll need...

  • strawberries
  • tomato-basil feta cheese
  • pecans
  • olive oil
  • apple cider vinegar
  • sugar
  • dried basil
  • salt

Blend the items above in a blender or food processor until creamy. Drizzle over salad and serve!

Serving Suggestions

I like to serve this refreshing salad with Baked Ziti or Chicken Pot Hand Pies. The flavors blend well with most everything, but especially taste great with Tuscan Chicken Pasta and Buffalo Chicken Pasta Bake.

Sure! Feel free to use any fruits you prefer. Blackberries and raspberries also taste great on this salad.

Would this salad be good with grilled chicken on top?

Absolutely! If I'm serving this salad as an entree, I often add grilled salmon or chicken as a topping. It tastes amazing with the homemade strawberry dressing.

Can this salad be made ahead?

It can be made about 6 hours in advance, but if you make it the night before, the strawberries may wilt a little. Be sure to store it in an airtight container in the refrigerator for best results.

Ingredients

SALAD

  • 1 head red romaine lettuce
  • 2 cups mixed greens
  • 1 pint strawberries sliced (remove caps)
  • 1 cup tomato-basil feta cheese crumbled
  • 1 cup pecans chopped

DRESSING

  • 6 whole strawberries remove caps
  • ¼ cup tomato-basil feta cheese
  • ¼ cup pecans
  • ¼ cup olive oil
  • 1 Tbsp. apple cider vinegar
  • 2 Tbsp. sugar
  • ½ tsp. dried basil
  • ¼ tsp. salt

Instructions

SALAD

    This was such a delicious salad! I want to make it for a family gathering but I have an aunt who is allergic to strawberries! What would be a good substitute for strawberries in this salad that would compliment the feta cheese?

    1. You could definitely use any type of berry in this salad. Raspberries, blueberries and blackberries work well. Fresh peaches are also delicious when mixed with feta cheese!
