What Type of Peaches Should I Use?
In North Carolina, we wait on the produce trucks to bring freestone peaches up the mountain every summer. If we can't wait, we travel down the mountain to get some.
I always know when summer is about to end because the peaches start leaving the building (kinda like Elvis). That's when it's time to make this fresh peach salad.
This year, I really hate to see the peaches go. I'm hanging on to the last freestones I can find because there's nothing like them. They're tart and fuzzy on the outside, super sweet on the inside, and easy to pull apart from the pit.
How to Make It
- Slice peaches and set aside.
- Place spinach leaves or mixed greens on a large plate.
- Arrange fruit on top of the greens.
- Place pecans on a sheet pan. Spray pecan pieces with cooking spray. Toast in a 350 degree oven for 3 to 5 minutes, then cool. Dust with salt if desired.
- Sprinkle salad with goat cheese and toasted pecans.
- Serve with your favorite vinaigrette, or eat as is.
You don't even need dressing for this salad. It's just that good. But, if you decide you do, a sweet peach salad dressing would fit in perfectly.
Blend fresh or frozen peaches with bottled vinaigrette and you've got a simple peach salad dressing!

In this case, frozen peaches won't yield the same results. But, if you want to chop them up and serve them diced, they would probably work just fine.
Any sweet summer peach will work in this recipe. Freestones are easier to slice and work with, but if you can't find them in your area, feel free to substitute another type of fruit.
Sure! Feel free to substitute romaine lettuce, arugula, or mixed greens. You can also use feta cheese, walnuts or pistachios if desired. Grilled peach salad is especially nice if you'd like to make that addition.
