Toasted Pecan Peach Salad is sweet, savory and refreshing. It's topped with southern freestone peaches, sun-dried tomato goat cheese and toasted pecan crumbles.

Ingredients

freestone peaches
sliced
2
cups
mixed greens
¼
cup
sun-dried tomato goat cheese
¼
cup
pecans
chopped and toasted
Instructions
Slice peaches and set aside.
Place mixed greens on a large plate.
Arrange peaches as you wish on top of the greens.
Spray pecan pieces with cooking spray. Bake in 350 degree oven for 3 -5 minutes, then cool. Dust with salt if desired.
Sprinkle salad with goat cheese and toasted pecans.
Serve with your favorite vinaigrette, or eat as is.
Notes
Store leftovers in an airtight container in the refrigerator for up to 1 day.
