Can It Be Made Without Tequila?

Here's a cool tip...Strawberry Margarita Icebox Pie can be made with or without tequila, so if you choose to leave it out, you'll still have a delicious frozen strawberry pie that tastes like limeade with hints of strawberries.

Without the tequila, just call it a Strawberry Limeade Pie. Everyone will love it!

The tanginess of the lime pairs perfectly with the sweetness of the strawberries. Adding tequila gives it an interesting 'zing'. But, this frozen strawberry margarita pie tastes amazing with or without the alcohol.

How to Make the Crust

This pie starts with a buttery pretzel crust. It has just the right texture and saltiness to compliment the taste of a margarita.

If you have a blender or food processor, the next step is really fun. Throw in some pretzels, (I used gluten-free), and grind them into a coarse chop. Of course, if you'd rather use graham crackers, that's a great substitution.

Add melted butter plus a little sugar, then press the pretzels or graham crackers into the bottom of a pie plate or dish. To harden the crust, bake it at 350 degrees for about 10 minutes, then cool to room temperature.

What's in the Filling?

The filling is a mixture of cream cheese, condensed milk and key lime juice.(ad) If you choose to add tequila, this is the time to do it.

Throw a few strawberries into the filling for added flavor. Not enough to turn the filling dark pink, but just enough to give it a hint of color.

Mix it all together and pour the creamy filling into the cooled pretzel crust. Spread it with a spatula until it is smooth. Pop the pie into the freezer for at least four hours until it's frozen to perfection.

Decorating Ideas

Besides being delicious, this pie is fun to decorate! Once you take it out of the freezer, let it thaw for 10 minutes, then decorate with strawberries and limes as desired.

I like to start with sliced strawberries and limes on one side and layer the fruit as pictured. Let your creative juices flow!

Freezing and Storage

Serve immediately without freezing, or wrap pie tightly with plastic wrap or aluminum foil and freeze for up to 3 months. Make sure you wrap it without the decorations on top!

This pie is meant to be decorated after it's frozen. You can refreeze leftover pie (if you're lucky enough to have any).

Does the tequila freeze in the pie?

Yes, the tequila will freeze when mixed with the other ingredients. Using just ¼ cup prevents it from staying in liquid form.

Can I substitute other fruits?

Sure! Feel free to make any substitution you like. You can try using raspberries, blueberries or blackberries which should work very well.

Can I use frozen fruit?

Yes, you can use frozen fruit in this recipe but it won't look the same if you decorate the top. You could use frozen fruit and leave the top undecorated, or simply top the pie with whipped cream or cool whip.

Ingredients

CRUST

  • 2 cups crushed pretzel crumbs I used gluten-free
  • 1 stick butter melted
  • 1 Tbsp. sugar

FILLING

  • 16 oz. cream cheese
  • cup key lime juice I use Nellie & Joe's ad
  • 14 oz. can of sweetened condensed milk
  • 3 strawberries diced
  • ¼ cup Blue Agave Tequila

GARNISH

  • 6 strawberries sliced
  • 2 limes thinly sliced
  • tiny mint leaves

Instructions

  • Preheat oven to 350 degrees.
  • To make the crust, pulse pretzels in blender until crumbly.  
  • Add melted butter to pretzels and mix well.
  • Pour pretzels in bottom of a pie plate or dish. Press firmly into the sides and bottom with your hands.
  • Bake crust at 350 degrees for 10 minutes.  Take out of oven and cool completely.
  • With a mixer, beat cream cheese until fluffy.
  • Add lime juice and beat until there are no lumps.
  • Add sweetened condensed milk and strawberries.  Beat on high speed for 2 minutes.
  • Stir in tequila.
  • Pour filling into cooled crust and freeze for at least 4 hours before serving.
  • Take pie out of freezer, let thaw for 10 minutes, then decorate with strawberries, limes and mint leaves.

Notes

  • The tequila can be left out of the recipe if desired. You won't get the margarita flavor, but it will still taste like strawberry limeade, which is a good thing. 🙂  
  • Gluten-free pretzels work well in this dish.
  • Since this pie contains tequila, it's intended for adults age 21 and over.

  3. If making these as an individual dessert instead of a whole pie how long would you suggest cooking the pretzel crust for in say a muffin tin pan?
