Instructions

  1. Place chicken in the bottom of a cast iron skillet (ad) or 13 x 9 baking dish.
  2. Mix cream cheese and packet of taco seasoning together.
  3. Spoon cream cheese mixture over chicken.
  4. Sprinkle cheddar cheese on top and cover with foil.
  5. Bake at 375 degrees for 30 to 40 minutes until chicken is done.
  6. Add toppings of your choice.

Ingredients

CHICKEN

  • 8 small chicken breasts
  • 8 oz. cream cheese
  • 1 taco seasoning packet
  • 8 oz. cheddar cheese shredded

TOPPING IDEAS

  • 1 cup sliced tomatoes
  • ½ cup diced cilantro
  • ½ cup diced green onions
  • ½ cup tortilla strips
  • ½ cup shredded cheddar cheese
  • ½ cup sour cream
  • optional toppings of your choice

Instructions

  • Preheat oven to 375 degrees.
  • Arrange chicken breasts in a cast iron skillet or 13 x 9 inch baking dish.
  • Using a mixer, blend cream cheese and taco seasoning together.
  • Spread taco cream cheese mixture over chicken.
  • Sprinkle cheddar cheese over the top. Cover with foil.
  • Bake at 375 degrees for 30 to 40 minutes until chicken is done.
  • Let chicken rest 10 minutes, then sprinkle toppings over chicken, or put in bowls for people to help themselves.

Notes

  • Ovens vary. Start at 30 minutes cooking time for chicken and increase if it is not done.
