Ingredients

  • fresh mint leaves - it's easy to grow your own in a container, or purchase it packaged at the grocery store
  • coconut rum - Bacardi makes a nice version
  • limeade - Simply Limeade is what I recommend
  • lemon-lime soda or club soda - Sierra Mist or Sprite work well. Use club soda if you are cutting back on sugar
  • lime - a squeeze of fresh lime makes a big difference.

How to Make a Coconut Mojito

  • In a tall glass, add 2 to 3 mint leaves to the bottom, along with coconut rum.
  • Muddle the mint with the rum by using a spoon or muddler (ad)
  • Add ice to the top of the glass.
  • Add limeade and stir well.
  • Pour lemon-lime or club soda to the top of the glass. Stir well.
  • Garnish with a lime and extra mint leaves.

Recipe Tips

  • You can substitute 1 ounce of lime juice and 1 ounce of simple syrup for limeade if it's not available.
  • Be sure to muddle the mint with the rum to mix the flavors together.
  • If you want your cocktail to be less sweet, use club soda instead of lemon-lime soda.
