Pumpkin Brioche French Toast is the perfect breakfast and brunch recipe. It's made with buttery brioche bread that's stuffed with cream cheese, then slathered with pumpkin butter and fried to perfection!
Make the egg wash by beating eggs, milk and a dash of pumpkin spice together in a shallow bowl. Set aside.
Mix softened cream cheese, pumpkin pie spice and maple syrup together in a separate bowl.
Spread cream cheese mixture on one slice of brioche bread and pumpkin butter on the other. Close bread to make a sandwich.
Dip both sides of brioche bread sandwich in egg mixture. Let excess drip off of bread before adding it to a skillet with melted butter.
Fry french toast on one side for about 2 minutes in skillet over medium heat. Flip with a spatula and fry the other side for 2 more minutes until golden brown.
Remove french toast from skillet and place on a plate. Slice in half and sprinkle with powdered sugar if desired. Serve with maple syrup on the side.
Notes
Be sure to choose a thick bread or it won't hold up to the filling.
Feel free to add other toppings such as toasted pecans and whipped cream if desired.
