STEP 1 - Preheat oven to 350°F. In a large baking dish, spread shredded or sliced turkey evenly on the bottom of the dish.
STEP 2 - Spread cranberry sauce over the turkey, spreading it evenly.
STEP 3 - Spoon mashed potatoes on top of the cranberry sauce, smoothing it out to cover the entire layer.
STEP 4- Top with leftover dressing, spreading it evenly over the mashed potatoes.
STEP 5 - Cover the casserole with aluminum foil and bake in at 350ºF oven for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the stuffing is golden and all ingredients are heated through.
Notes
Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in the oven for best results.
Add any additional leftovers you have, such as a layer of green beans or corn, between the turkey and cranberry sauce layers.
You can assemble the casserole a day in advance and refrigerate it until you’re ready to bake. Just increase the baking time by about 10 minutes if baking straight from the fridge.
