Melt semi sweet chocolate chips with coconut oil in a microwave safe bowl in 30 second intervals.
Stir between each interval until chocolate is smooth and creamy.
Repeat process with white chocolate chips in a separate bowl. (oil is not needed)
Hold each strawberry by its cap and swirl into a bowl of melted dark chocolate. Use a spoon to help cover the berry. Leave ½ inch free from the top of the cap.
After dipping, place the berries on a sheet pan lined with wax paper to harden.
To decorate, insert a fork or spoon into white chocolate and swirl in a striped motion over dipped strawberries.
To decorate pecan variety, dip strawberries half way into crushed pecans immediately after dipping into dark chocolate.
Once all strawberries have been decorated, place on a sheet pan and put in the refrigerator to harden.
After chocolate has hardened, use a sharp knife to trim away excess chocolate around the edges.
Place strawberries on a plate to serve or in gift boxes to share. Store in refrigerator for up to 2 days until ready to serve.
Notes
Make sure strawberries are completely dry before dipping or chocolate won't stick.
Berries dip best when they're room temperature.
Dipped strawberries can last up to 2 days in the refrigerator, or 1 day if not refrigerated.
For better control, use a small tip on a piping bag or squirt bottle to drizzle the white chocolate.
