½cupstrawberry jam / preserves(or red pepper jelly for a little heat)
12stripsbacon(regular slices)
2cupssharp cheddar(shredded)
1 largeegg(whisked with 1 Tablespoon milk or water)
1Tablespoonpoppy seeds(optional)
Instructions
BACON
Spread bacon strips onto a parchment-lined baking sheet.
Bake bacon strips at 400ºF for 15 minutes until crispy. Drain on wire rack until cool.
PASTRY
Preheat oven to 425 degrees.
Roll out puff pastry dough on parchment paper onto a half sheet pan or baking sheet.
Use a pizza cutter or sharp knife to cut sheet of puff pastry into 12 rectangles.
Spread softened cream cheese onto each rectangle.
Using a knife, spread 1 teaspoon of strawberry jam (or pepper jelly) on top of cream cheese.
Stack a strip of bacon diagonally across each rectangle. Break slices in half to make them fit if necessary.
Sprinkle bacon with a generous amount of shredded cheddar cheese.
Wrap the bacon strip by taking the top right edge of pastry and pulling it down to the middle. Pull up the bottom left edge to overlap.
Press pastry together tightly and seal. Repeat the process for each rectangle of puff pastry turnovers.
Make an egg wash with a beaten egg mixed with 1 Tablespoon or milk or water.
Brush top of each turnover with a pastry brush dipped in egg wash, then sprinkle with a few poppy seeds if desired.
Bake turnovers at 425 degrees for 15 minutes until flaky pastry is golden brown and bacon is crispy on the ends.
Notes
Wewalka or Jus Rol are the recommended puff pastry sheets to use. They roll out on parchment paper to fit a baking sheet. If you use another brand, you might have to combine two sheets to fit your pan.
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, do so in a 350 degree oven for 5 to 10 minutes until heated throughout.
Turnovers can be frozen before or after baking. Be sure to wrap tightly in plastic wrap or aluminum foil to prevent freezer burn. Then place turnovers in an airtight container and freeze for up to 3 months.
Frozen turnovers can be thawed in the refrigerator overnight. If they're unbaked, cook them as directed in recipe. If turnovers have already been baked, reheat in a 350 degree oven for 10 minutes until cheese is melted.
Assemble turnovers ahead of time and store in the refrigerator until time to bake. Save the egg wash for later and brush it on right before putting turnovers in the oven.
