Bring 2 cups of water to a boil in a medium saucepan. Add 4 family size black tea bags or any type desired to the pan and take off of heat.
Steep tea for 5 minutes, then put in the refrigerator to cool down to room temperature.
Peach Simple Syrup
Dice 6 fresh peaches into chunks. Keep the peelings on because they add flavor to the recipe.
Add the diced fruit to a skillet with 3 cups of water and 1 ½ cups of sugar. If you like less sugar, feel free to use whatever amount of sugar or artificial sweeteners you wish.
Set the skillet on medium-high heat until it begins to boil. Let simmer over medium heat for about 10 minutes.
Turn heat off and break up the fruit with a potato masher or fork. This releases the best flavor, especially when using real fruit.
Cover the skillet and let fruit set for 30 minutes, giving it a quick stir from time to time. At the end of 30 minutes, remove large chunks of fruit pulp with a slotted spoon and place in a bowl.
Pour contents of the skillet into a colander or fine mesh strainer over a bowl. Pour the simple syrup into a jar or bottle and refrigerate until ready to use.
Peach Iced Tea
Pour the tea from the refrigerator into a large pitcher or container. Add 8 cups of water and 1 cup of ice.
Stir in at least 2 cups of the syrup and taste the tea to see if it needs more. I like to use all of the syrup in mine, which is usually about 3 cups.
You’re sweetening about 1 gallon of tea and water, so you need more sweetener than you think. Refrigerate any remaining syrup to use later.
Pour tea over tall glasses or mason jars filled with ice. Serve with a peach slice on the rim.
Notes
Serve this drink in tall glasses that are rimmed with peach slices.
Add a spoonful of fruit pulp to each glass and give it a stir.
Add fresh herbs like basil, mint or rosemary as a garnish.
