Loaded Carrot Cake

– fresh carrots – crushed pineapple – golden raisins – walnuts and coconut – spiced rum (or vanilla) –
– all-purpose flour
– white sugar, brown sugar
– baking soda, salt
– cinnamon, cloves
– oil, buttermilk, eggs
Grate carrots. Mix dry ingredients together in a large bowl. Combine wet ingredients in a separate bowl.
Mix wet ingredients and dry ingredients together.
Preheat oven to 350 degrees. Place batter in 13x9 inch baking dish. Bake for 45 minutes.
Cool cake completely. Make frosting by mixing cream cheese, powdered sugar and butter together.
Frost cake with frosting and garnish with walnuts or pecans.
