Potato Latkes

TRADITIONAL RECIPE!

You'll love this Potato Latkes Recipe that features crispy potato latkes with traditional toppings. 

INGREDIENTS

large russet potatoes  small onion matzo meal  large egg - canola oil kosher salt -  pepper

STEP ONE

Peel potatoes and place them in a large bowl of cold water. Add ice for best results.

STEP TWO

Using the large holes of a box grater, grate potatoes and onion into a bowl of ice water.

STEP THREE

Wrap the mixture in a dish towel or cheese cloth and squeeze out all of the excess water.

STEP FOUR

Potatoes should have all of the water removed before going to the next step. Leave potato starch.

STEP FIVE

Add grated potatoes, onions, kosher salt, pepper, matzo meal and egg to the potato starch in the bowl.

STEP SIX

The mixture should be thick enough to form a tablespoon of batter.

STEP SEVEN

Drop spoonfuls of the potato mixture into a frying pan filled with an inch of oil on medium heat.

STEP EIGHT

Flip cakes over with a slotted spoon or spatula and fry on the other side until golden brown.

STEP NINE

Cool latkes on a wire rack and sprinkle with kosher salt. Serve with sour cream and applesauce.
