1 pound carrots 2 tablespoons olive oil 2 tablespoons chives 1/4 teaspoon ginger  dash of sea salt 1/4 cup pure maple syrup 1/4 cup bourbon

Ingredients

Using a vegetable peeler, peel carrots on a cutting board.

Peel

Chop carrots diagonally with a serrated knife.

Chop

Sauté carrots in a skillet over medium heat in extra virgin olive oil and ginger.

Sauté

Add bourbon, maple syrup, chives and salt. Continue to cook until carrots are tender.
