butter - onions - peppers garlic - turmeric - paprika cumin- chicken - cilantro broth - white beans - corn gouda - cornstarch - cream
Chop cilantro, peppers and onions on a cutting board.
– Sauté onion and pepper in butter in dutch oven. – Add minced garlic, spices, chicken & cilantro.
– Add chicken broth, beans and corn. – Simmer for 15 minutes, then turn heat on medium.
– Add gouda cheese and stir. Mix cornstarch slurry and pour into pot. Add cream and mix well.
– Ladle soup into bowls and garnish with cheese, mini peppers, cilantro and tortilla chips if desired.
