Mashed Potatoes

EASY RECIPE!

Twice Baked Mashed Potatoes are loaded with russet potatoes, cheddar cheese, sour cream and crispy bacon!

INGREDIENTS

russet potatoes - butter salt - pepper - garlic sour cream - cheddar large eggs - onion crispy bacon - green onion

STEP ONE

Peel potatoes and place in pot in cold water. Cover pot and cook potatoes until soft...about 15-20 minutes.

STEP TWO

Add all ingredients to a large bowl with drained potatoes. Mash until blended together.

STEP THREE

Add 2 large eggs to mashed potato mixture. Blend until smooth.

STEP FOUR

Spoon mashed potato mixture into a greased 9x13 casserole dish.

STEP FIVE

Top with remaining cheese, extra bacon bits and chopped green onions. Bake at 350ºF until golden.
