Corned Beef

FORK TENDER

Cooking corned beef in a dutch oven makes it so tender it will melt in your mouth! Some folks like to call that 'fork tender'.

INGREDIENTS

– 1 large onion, quartered – 3 lb. corned beef brisket – 1 spice packet or dry rub – 1 tablespoon steak seasoning

INGREDIENTS

– 2 bottles of Guinness beer – beef stock – 4 large carrots – 6 red potatoes – 1 small green cabbage

PREPARE BRISKET

Place onion wedges in bottom of dutch oven. Rinse and dry brisket. Arrange corned beef brisket on top of onions. Sprinkle brisket with spices or dry rub.

ADD BEER

Pour Guinness beer and  beef stock over corned beef.

COOK

Place in 350 degree oven. Cook for 1 hour. Reduce heat to 300 degrees. Cook for 2 hours more.

ADD VEGGIES

Turn brisket over. Add carrots and potatoes. Sprinkle with steak seasoning. Cook 1 hour.

ADD CABBAGE

Add cabbage to the pot. Cook for 1 hour more.  Serve straight from pot or transfer to large dish.  Slice meat across grain.

SERVE

Serve with spicy mustard and more Guinness! It's delicious, tender and  melts in your mouth. Will make great reubens too!
