INGREDIENTS
-- 8 slices seedless rye – 8 slices swiss cheese – 2 cups sauerkraut rinsed and drained – 1 cup Russian dressing -- homemade corned beef

PREPARE BRISKET
Place onion wedges in bottom of dutch oven. Rinse and dry brisket. Arrange corned beef brisket on top of onions. Sprinkle brisket with spices.

ADD BEER
Pour dark beer and beef stock over corned beef.

BAKE
Place in 350 degree oven. Bake for 1 hour. Reduce heat to 300 degrees. Cook for 3 hours more.

MAKE REUBENS
– To make 4 sandwiches, arrange 8 slices of bread on a cutting board. – Pile ½ pound of corned beef on 4 slices of the bread and top with swiss cheese.

ADD SAUERKRAUT
Add sauerkraut mixed with Russian dressing to other side of bread and close sandwich.

GRILL SANDWICH
– Grill one sandwich at a time in a skillet over medium low heat. – Flip the sandwich using a large spatula after about 3 minutes.
